2017 Sauvignon Blanc


Our Sauvignon Blanc was hand harvested in early October after achieving optimal ripeness. It was hand sorted,crushed and whole cluster pressed then cool fermented in stainless steel by wild yeasts. The wine aged in stainless steel on fine lees for six months undergoing partial malolactic fermentation. It was then racked off and bottled in the spring of 2018.

Light fresh herbaceous grassy notes fold in neatly with citrus pith, starfruit and wet stony minerality. On the palate-focused and lean with subtle floral notes - finishing clean and steely.
